THE MAN BEHIND FEROX
Fabian Reis was born into a traditional vintner family in Stuttgart, Germany. He is the sixth generation winemaker and his family winemaking background dates back to 1893. He moved to Niagara on the Lake, Canada in 1995. He returned back to Germany for over 5 years to study his winemaking roots from 2006-2011 and attended one of Germany’s prestigious winemaking schools, working alongside wineries that are ranked Europe’s best.

Since returning to Niagara, Fabian decided to take a chance and leave the shadows of his long-established winemaking customs and set forth to produce his own style of wines alongside sommelier wife Stephanie. These premium wines will fiercely push the wine industry boundaries to the next level with wine quality and vineyard practices.

This geeky white blend combines the acidity and freshness of chardonnay with the aromatic complexity of Sauvignon Blanc, Pinot Gris and Gewürztraminer. The cool climate where the fruit is grown manifests in the glass through intense citrus notes, tangerine, rose, orange blossom and stone fruit. On the palate, it reflects the nose and it is supported by a sharp acidity and minerality.

Lovely combination of fruit forward aromas, with fresh-cut watermelon and strawberry leading the charge along with delicate floral notes of rose petal and cotton candy. It finishes with a distinctive minerality on the palate and a zippy acidity, nicely balanced with a clean and refreshing mouthfeel.

A very appealing Bordeaux blend with lovely sweet aromas from the barrel aging, confectionary red fruits on the nose and on the palate. Quite complex for its age. It offers the right balance between earthy and fresh red fruit notes.

SAUVIGNON BLANC

This fresh style of Sauvignon Blanc shows white stone-fruit, fresh herbs and white flower aromas in the glass. It’s refreshing, but still rich and concentrated in terms of flavors. There are also some soft and creamy notes deriving from aging on the lees and malolactic conversion. The flavors of this wine make it an extremely food friendly wine. The ideal serving temperature is around 7°C and the possible pairing partners are close to infinite. It goes well with vegetables aperitif based on asparagus, artichokes, avocado, fennel, tomatoes or with seafood such as mussels, crab, lobster, salmon or trout. The freshness of its acidity even allows pairing with more intense dishes like poultry, pork chops or goat cheese.

The primary fruit flavours of 2020 Sauvignon Blanc are zesty lime, herbaceous hints, green apple, passion fruit, gooseberry and grass. These notes come mostly from aromatic compounds called pyrazines and thiols that are abundant in Sauvignon Blanc grapes and are preserved thanks to a slow and extremely delicate vinification using cold temperature, and protection from oxygen.

RIESLING RESERVE

This powerful Riesling spent 16 months in French oak and Acacia barrels. It shows an extremely complex aromatic profile as result of carefully selected fruit, slow fermentation at cool temperature and slow ageing in 3 barriques of different toast level. In the glass you’ll find floral and fruity aromas alongside sophisticated notes of toast, honey, wax, vanilla, baked tart and a creamy texture derived from the time spent in barrel.

In the glass, it’s thick with oily texture and slow tears. On the nose, intense floral scent with sweet-spice flavours, ranging from citrus, mango, pineapple, banana, rose petals to honey, hazelnuts, vanilla and cloves. Marked notes of cinnamon and an elegant finish.

BRUT NATURE

Crafted in the Méthode Champenoise, the 2017 Brut Nature is lively, elegant, and beautifully balanced. Primary aromatics are rooted in Golden Delicious apple, lychee and cantaloupe, whilst an evident brioche, sweet butter and pastry note becomes apparent, courtesy of 4 years contact with fine lees and complete malolactic conversion. In the glass unearths a subtle candied note, owing to fermentative style and vintage. The initial palate mirrors the nose, with a focus on hazelnut, Bartlett pear, underripe nectarine and pineapple – the mousse is creamy, and unoffensive. A subtle minerality is present on the back palate, alongside a fleeting note of Meyer lemon zest. “Brut Nature” refers to a sparkling wine that contains zero dosage and less than 2 grams of sugar per litre.
