This quote from Markus Schneider gets it onto the point and shows how much he is connected to wine. On a first sight, this might not be too much of a surprise, as he after all grew up in Ellerstadt, a small village in the Palatinate where vineyard to vineyard and wine estate to wine estate is lining up. Yet Markus Schneider has built something special here: A winery that he founded in 1994 with only one hectare and is now expanded into an international brand. Today he manages around 92 hectares – and, top international restaurants and hotels, the best airlines and cruise fleets in the world included his wines into their portfolio.

TOHUWABOHU thus describes the greatest possible disorder that the ordering hand of a god needs. Our flagship of the oldest Merlot and Cabernet Franc plantings of the estate. The plots are close together and show many different soil structures on a small area. The vines are deeply rooted between layers of gravel, gravel terrace and fine dune sands.

The grapes come from different vineyards. Some of heavy clay / loess soils on the plain, the others of colored sandstone, clay and limestone and much higher plots. The vineyards ripen at large intervals and are harvested independently of one another, in a very differentiated manner.

Kaitui Sauvignon Blanc

Our oldest Sauvignon Blanc parcel is located at over 280m above sea level. NHN below the hairline. This cool altitude is dominated by fine limestone and coarse limestone rock. After several reading cycles and berry selections, the fermentation followed and a multi-month fine yeast storage in 500 tonneau barrels.

Riesling Alte Reben

The vines of our oldest Riesling vineyards, over 40 years old, are deeply rooted in dense layers of loess, clay and loam as well as on rocky limestone. The vineyards are traditionally cultivated with a lot of manual effort.

JOHANNISKREUZ is considered the “birthplace” of the Palatinate Forest and lies on a mountain saddle between Hammertal and Schwarzbach. On this historic square, the oaks were cut for our piece barrels (1,200 liters) at an age of 250-300 years and manufactured in the traditional way. These now serve as a deposit for some of our best Chardonnay games.
