Scheibel Brennerei
Emil Scheibel was born on Novemer 11th, 1899 in the small Black Forest village of Kappelrodeck. No wonder that with so many Schnapps figures the path of life in the Schnapps Industry was mopped out. Only a small detour , the takeover of the local grain mill run by the Scheibel family , dissuaded him from the path of his life.
The chronic lack of money of the Black Forest farmers , who preferred to pay in kind in the farm of salve made Kirsch ( Cherry ), led by Emil Scheibel to the Black Forest Schnapps. His words are : “ I could drown in Schnapps ! What to do with the stuff ? He is supposed to have said once, not yet aware that he had the inspiration of his life.
The burning rights, which his family owned , but had only been used to cover their own needs, gave him the chance to get into the burning industry himself. In 1922, at the age of 22, Emil Scheibel bought an old Black Forest farm, which is still the company’s headquarter today, where he founded the Emil Scheibel distillery and created the base for a company that, under his heirs , Louis and Michael Scheibel , became a brand name for Made Black Forest brandies. Today Scheibel is one of the leading manufacturers of fine spirits in Germany and sells its products in leading Specialist retailers worldwide , including Japan, Australia and Canada.
The Ghost makers are today Michael Scheibel and Raphael Sackmann. As a counterpart to the old time distillery , where Scheibel still distills over a wood fire as it was a hundred years ago , the new time distillery was specially developed for Scheibel by a designer and with its modern style symbolizes the company’s innovative strength. The boilers in the new era are operated via touch screens , and the production process can be observed very closely on screens. They heart of the system are the 22 – carat gold plates in the amplifier columns. Sulfur, acid and fats that arise during the distillation are captured by the gold and therefore do not go into the distillate –called Scheibel Auria process . These gold plates are exchanged and refurbished three times a year. Scheibel is convinced that this makes the products more filigree , milder and more diverse, makes the product unique and different than any other brandies.

Smoke that slowly rises up the chimney and envelops its surroundings in a light veil of wood aromas – an image that perfectly sums up the unique aroma of the new Scheibel Premium chimney cherry. Already in the smell you can feel the delicate smoke, in the taste it becomes more intense in addition to the characteristic bitter almond notes of the cherry water, rises up on the palate and wood aromas appear subtly, which remain present until the end. The basis of this unique cherry water are dark firing cherries from the Black Forest, which have been unmistakably refined. The particularly aromatic Williams pears that we use here grow in the Rhone Valley. The pears are handpicked, chopped and pitted. Due to the slow, cool fermentation, the aromas are retained and are then reflected in the distillate. The brandy is distilled over gold in our ‘neue zeit’ distillery and then stored in oak barrels for several months. There the distillate gets its unmistakable character.
A nice companion to crème brûlée or mild cheese.
